What I Ate Wednesday #2

Hello again, my friends!

I am so glad that February is OVER. For being the shortest month of the year, it sure felt long. Anyone else think so?

I’ll give you the quick and dirty update since my first WIAW: work has been CRAY and I’ve been munching on all the carbs, nonstop. Here’s yesterday’s eats:

As always, I started my morning with warm water with lemon. As I drove to work I sipped on some black coffee and this dreamy smoothie.


My smoothie had almond milk, Vega vanilla protein powder, 1 and 1/2 bananas, a handful of spinach leaves and a big spoonful of peanut butter. It was super creamy and delicious!

After about 4 and a half hours of work, I took a quick break and snacked on some roasted chickpeas. Seriously guys- I’m OBSESSED. Check out my recent recipe post; I promise once you start making them you’ll be addicted too.


Lunch was super basic: a homemade spinach and black bean burger with quinoa. I usually make a big batch of both every Sunday to prep my lunches for the week. I also had a huge apple covered in cinnamon.


After work I rushed home and ate some leftover pizza from last night (veggie, no cheese) and quickly read the assigned reading for my Bible study.


I felt kind of drowsy and still wanting to snack, so I grabbed an almond milk latte on my way to the church.


Once home again, I grabbed a peanut butter zucchini brownie and warmed it up. Again, no picture, but you can find the recipe here. I’m totally counting it as a serving of veggies for the day.
